Villa Rota’s in-house dining service goes on the road with Villa Rota, Anywhere. Chef Walter Bianconi had a dream many years ago: “To bring Michelin-starred cuisine outside the villa while preserving its quality.” That dream is now a reality as Villa Rota, Anywhere offers catering for weddings and events, ready to travel throughout Italy and abroad to meet every need. Our menus are always tailored to tastes, dietary requirements, and the style of each event.
Originally from Treviso, Walter Bianconi spent 23 years at the helm of the renowned Ristorante Tivoli in Cortina d’Ampezzo, which he ran together with his wife Donata. The restaurant was described as “one of the most interesting gastronomic laboratories in our country.”
Chef Bianconi has the confidence of someone who truly learned his craft in the kitchen. It all began in the late 1980s, when Walter met Jean Claude Fabre (Sous Chef to the renowned Jacques Maximin of the Hotel Negresco in Nice). Their encounter led to two tangible results, one of which is a book titled Piatti Senza Frontiere (Dishes Without Borders). In its preface, Sergio Zavoli wrote: “Two Mediterranean cuisines, rooted in a grounded identity—these chefs do not simply try to fill plates but strive to understand quality and reflect on the diversity of what they offer.”
In 1993, their friendship also led to the founding of the Italian section of Jeunes Restaurateurs d’Europe, a group of young restaurateurs united under the motto “Talent & Passion.” This marked Walter’s ascent into the firmament of haute cuisine: 1 Michelin Star, Il Sole di Veronelli with a score of 100/100, 3 Forks from Gambero Rosso (90/100), 16/20 from L’Espresso, and 17/20 from the acclaimed Gault Millau.
“In 1990, while in France, I came across the association Jeunes Restaurateurs de France (JRF) and immediately felt connected to their motto: “Talent & Passion.”
A couple of years later, when the French association opened its doors to restaurateurs from other countries and JRF became Jeunes Restaurateurs d’Europe, a group of colleagues—soon to become close friends—and I founded the Italian section. My wife Donata calls them “her talented sons.” To me, they are young people with great passion.
Passion is an essential ingredient in our craft; it is what makes the world go round. The spirit that drives us, today as in the past, is that of a Europe united through food and shared meals.
The purpose of the association is to foster friendship and collaboration among young chefs and to promote national cuisine, a focus on flavors and cultivating taste—values that remain a cornerstone of Villa Rota today.”
